Even though I love slow mornings with coffee in bed I admit that it has become a rare luxury now a days. Especially when I have  meetings, school or work to get to on time. I can’t function without my morning coffee and breakfast so this smoothie is perfect to enjoy on the go but also as a snack or dessert. You have to try this one, it tastes divine!

What you need for two portions:

4 dates

6-8 almonds

1 can of coconut milk (light or regular, either works)

2 espressos

2 tablespoons of oats

ice cubes

blender


Cover the dates, almonds and oats with some coconut milk and blend with a blender until smooth. Pour the rest of the coconut milk and add the coffee. Blend everything together and add some ice. Serve in a glass with ice cubes. Enjoy! 

green energy booster

I feel like I’ve been more tired than usual lately. I think it might have something to do with finally being able to let myself relax. For the past year and a few months I’ve been waking up more than 10-15 times each night. I didn’t sleep more than 4-5 hours per night, so now when I finally get more sleep I feel like I allow myself to be tired more.

I’ve begin to focus more on my health again and most importantly I need all the energy I can get. I never skip my vitamins, I spend loads of time outdoors and I try to eat more fruits and vegetables.

Here is my favorite green smoothie I usually make before lunch after some play time in the park. I don’t use any “super foods”, I just try to keep it clean and simple. It tastes quite sour but that’s how I like it. If you prefer it sweet add a small banana.


Recipe for two

1 avocado

1 kiwi

large handful of spinach

1 fresh lemon (juice)

cold water

Blend everything in a blender. Add water until wanted consistent achieved. Enjoy cold.
