My healthy breakfast

Good morning. Today I tried a new breakfast that I’ve been wanting to try for some time already. This is actually the first time I’ve made porridge out of chia- seeds, even though I’m very familiar with chia in other shapes and forms. All I did was to follow this easy peasy recipe from the book Viljaton Kattaus by my dear colleague Emmi-Liia Sjöholm.

Smooth chia porrige with lingonberries for one:

1 dl chia- seeds

2,5 dl almond milk

1 tablespoon honey

1 dl lingonberries (I used frozen)

Blend the milk and seeds together and let the chia swell for approximately 10 minutes. 

Put the porridge, berries and honey in a blender and blend until smooth. 

Serve with lingonberries on top. Enjoy!

Easy like Sunday morning

I love a late breakfast especially if I get to enjoy it in peace and quiet all by myself. Today is my study day, meaning that I study all day from morning to evening while hubs takes care of little miss happy face ;). I usually make myself a nice cup of coffee and some sandwiches and park myself in front of the computer to watch my lectures online. Studying over the internet definitely has it’s challenges but being able to be at home dressed in pyjamas is really hard to beat ;).
