This creamy tomato soup is my all time favorite. I have been making it for years and keep returning to it as soon as the weather gets chilly. I only make simple foods that are easy to make, so this one is a perfect example of a dish that’s made in a few simple steps. Hope you like it.

What you need for 4 people:

about 15-20 (1 kg) mature red tomatoes

2 red onions

2 -4 cloves of garlic

2 basil plants

2 chicken broths

3 dl cream ( I use 10%)

2,5 dl creme fraiche

salt & pepper


Chop and fry the onion and garlic in oil. ¬†Chop the tomatoes and add them to the pan (if it’s deep) or switch into a kettle. Let simmer for about 10 minutes. Add the broth and the leaves of the basil. Add salt and pepper. Mix everything using a mixer. Add cream and creme fraiche and blend.

Serve with boiled eggs or cottage cheese.

    I’m surprised you use low fat cream, I thought you advocate using normal fat products instead of low fat?

      I use low fat products simply because I don’t like the taste and how I feel after eating too creamy and fat foods. Tasting fat is something I really dislike, unless we are talking about potato chips ;D
