Today might not be the best day for soup since the weather surprised us with some  warmth and sun but I’m still going to share this recipe, in case cooler days will return at some point ;). This soup is so delicious and easy to make I’ve made it twice within one week since I first tried it at the cottage made by my mother in law.

Recipe for four:

3 large zuccini’s

2 medium/large potatoes

2 large onions

 2-3 cloves garlic

1/2 package strong koskenlaskia cheese 

2 vegetable broth

parsley for decoration

Boil everything until soft. Pour out most of the water but keep a little bit (about a dl or two). Add the cheese and the broth.  Stir everything together with a mixer until smooth.

    Do you eat anything high in calories? Or mostly just soup and salad? I don’t mean unhealthy deep fried food but plenty olive oil, good cheese, nuts etc without thinking about the calories at all? I mean you are a model and you probably have to listen to your agency etc.

      Well yes, I eat high calorie foods but I am not too into greasy tasting foods like fat sauces, oils, cream and butter. I eat cheeses like feta and halloumi, but I rarely eat other kinds or very strong cheeses. ALTHOUGH, I rather eat light, simple and easy foods and then enjoy myself having chocolate, chips, popcorn, pizza or whatever I feel like when I want. I really don’t eat super light or low in calories and I really don’t count anything I eat. I eat everything, and when I eat salads and soups I always eat bread and I also eat a lot of pasta, rice and potatoes. One thing I couldn’t care less about are to stay within any kind of measurements for my modeling career. Not that I donut appreciate my work because I really do, but because I decided to work with my body and face as long as I can but always being myself, natural and healthy. I focus on other things in life and being able to use my body as tool at work is great, but not something I wan tot put my focus on. Enjoying life and feeling good mentally and physically is much more important than trying to fit into a size 0. I would be sad if I lived a life trying to achieve happiness through any kind of body ideal.
